New THRIVE Products

Chicken Salad

1 1/2 C THRIVE chopped chicken
1/2 C THRIVE celery
1/3 C THRIVE chopped onion
3 C water
1/2 C mayonnaise
Salt and pepper to taste

Combine chicken, celery, onion, and water in a saucepan over high heat.  Bring to a boil and reduce heat to low and simmer until mixture is re-hydrated (about 5 minutes).  Drain for about 10 minutes and set aside in the refrigerator until cool.

Combine the cooled chicken mixture with mayonnaise.  Season with salt and pepper.  Spoon onto rolls, lettuce leaves, or crackers.

I actually added about a cup of fresh grapes to my recipe to give it a little extra crunch and sweetness.  VERY yummy!

Black Bean and Corn Salsa

1 1/4 C THRIVE black beans, rinsed and cooked
1 !/4 C THRIVE pinto beans, rinsed and cooked
3/4 C THRIVE sweet corn
1 (4oz) can chopped green chiles, undrained
1/2 small red onion, finely chopped
1/4 C cilantro leaves, finely chopped
1/2 C red wine vinegar
1/2 C vegetable oil
Salt and pepper to taste

In a small bowl, ass corn and cover with warm water.  Let sit 5-10 minutes or until corn is softened and re-hydrated.  Drain

Mix the beans, corn, green chiles, onion, and cilantro together in a large bowl.

Stir the vinegar and oil together in a bowl.  Pour dressing over bean mixture and toss to mix evenly.


I actually used the THRIVE instant black beans and the THRIVE instant red beans in this recipe and it turned out great.  It wasn't pretty, but it sure was yummy.  I also added half an avocado to the salsa and it was DELICIOUS!
